    Honestly mate, at that price range you can go nuts. As you said the HDD can be re-used, which means that cuts down a noticeable amount of money off the price. This is what I could come up with really quick, and it's a hell of a lot of power and it comes in just over your 600 GBP range. This build has all the horse power you could want, and should be nice and quiet when all is said and done and tucked away in the Fractal Design case.
     
    As you said, you could maybe squeeze out 750 GBP, so you could easily fit in a GTX 780 without going over 700 pound. That build with an i7 and a 770/780 will be far more power than you could ever need for years and years to come. I hope this helps, with a budget that large this is quite an easy build to be honest.
     
    EDIT: Now that I have seen the prices on the pcpartpicker U.K. site, I see that the build I made came in at about 720 GBP. Some things you could do to bring the price down would be getting a cheaper case like a Corsair 400R/500R, and getting a cheaper CPU like a Intel Core i5-4670. The downgrade in CPU performance won't really be noticeable when it comes to gaming, so there's that to consider. BUT, for recording (video, I presume), the i7 would be the most effective when it comes to computation like that.

    I haven't played the Persona series yet but I bought a Playstation 2 to play Persona 4. And I'm going to get a Playstation 3 to play Persona 5 in 2015.

    While I don't think the Xeon is a bad processor, I think with the amount he is willing to spend he could get a Haswell brand processor and it would provide a bigger performance boost.  Ide recommend a Intel I7-4770k processor, mostly because its unlocked.
     
    Unlocked means that it can be overclocked to pretty much whatever you want it to (assuming you have the cooling for it).  It can be updated a little bit with not much effort on your part and give you an extra 10%ish without too much hassle.
     
    ALSO - Just an aside, from what I understand Xeons often have a lot of motherboard compatibility issues (Since they are workstation CPU's and not the standard consumer ones), so if you decided to go with that you would need to make sure that the motherboard supports the Xeon as a CPU... because most of the common ones do not.

    The particular xeon 
     
    This isn't actually as bad an idea as it might sound upon just seeing "xeon" being reccomended for a mid-range gaming system.  While clocked lower, this particular Xeon does actually have quite comparable performance to the i7 in most applications.   It also performs slightly better in many applications and is slightly cheaper than what be the more obvious Ivy Bridge suggestions, the Core i5 3570k or 3770k.  Ivy Bridge motherboards are, as this poster suggests, often availible at significantly lower prices for comprable feature sets.  They do use a  previous socket design so you may be limited in upgrading the CPU going forward, but people are more likely to upgrade graphics card, HDD/SSD and other parts unaffected by this. 
     
    Also the general suggestion to spend more money on the GPU and maybe a little less on the CPU is not an espescially bad one as, generally, games the ability to push graphics settings while maintaining performance with a system built around either of those CPUs will be GPU limited more so than CPU limited.  The most notable exception to this is with exceptionally poorly optimized games where having as powerful of a CPU as you can get to brute force its way through things like thread synchronization overhead clogging things up might gain you a couple FPS.  
     
    So I'll second the suggestion that you perhaps look at spending $100 less on the CPU and $100 more on the GPU or an SSD instead of a hard disk - though the xeon suggested might actually net you more savings than in total that IF you find an exceptionally good deal on an Ivy Bridge (socket 1155) motherboard.   Another option would be the Core i5 4670k - broadly similar performance to the I7 4770k and a hudred dollars cheaper.  It is worth noting that the 4670k and 4770k do both allow for some overclocking - a repesctable ammount can often be acheived with stock cooling - and support for AVX2 / FMA3 instructions.  Basically that means that they may run some games in the future optimized for that significantly better, but that's more of a theoretical benefit and it is unlikely too many games will be significantly so optimized.  Here's some comparisons as food for thought:

    The better multithreaded performance of the i7 though may come more into play in comparing suitability as a gaming CPU as time goes on and games become better optimized for it with the new consoles.  So there is that and as long as you get at least a good graphics card you're  not going to be building a bad system either way, but in the present moment I'd say an i5 or that xeon with Geforce 770 would be a better choice than say the i7 4770 would be with a 760. At this end of the spectrum, a slightly slower CPU but faster GPU will net you better performance with current games than spending the same price but on a faster CPU and slightly slower GPU.

    Moving into the Victorian era would be pretty cool, I remember hearing a pretty cool idea somewhere that you'd play as jack the ripper(who'd turn out to be an assassin who is misrepresented by the templars).

    Really hope they come up with some new cool idea that makes the gameplay seem fresh(like the whole sailing mechanic in ac4), I'm sure that I'm not the only person who's kinda bored by the core gameplay in assassins creed.
